Quelle che leggerete non sono semplici ricette – sicuramente propedeutiche ad una successiva preparazione, da parte vostra, di ottime pietanze – ma sono, anche e soprattutto, rappresentazioni concrete – e cosa c’è di più concreto del cibo! – di processi evolutivi, di trasformazioni, di contaminazioni; eh sì, perché proprio la cucina è, forse, la migliore testimone di quella che è la vera identità isolana: perfetto miscuglio – o impasto, per rimanere in tema – tra in&out, tra elementi interni, legati alla storia e alle consuetudini del luogo, e le tantissime e continue influenze esterne determinate da un turismo che già a fine Ottocento cominciava ad esser l’economia trainante di Capri.

What you find here are not simply recipes – even though surely leading to the subsequent preparation of excellent dishes on your part – but, above all, the basic representation (and what is more basic than food?) of evolutionary processes of contamination, of transformation. Yes, because the art of cooking is probably the best demonstration of the island’s true identity: a perfect combination – or blend, to keep to the culinary theme – of internal elements forming part of its history and its customs, and the countless and continuous outside influence deriving from tourism, which at the end of the nineteenth century was already becoming Capri’s driving econom.
