The following recipes were collected not in a hurry, nor with the intention of publishing them. They were collected slowly, one by one, for the private use and benefit of a small group of friends… The recipes would have stayed but for a member of that group of friends whom I have mentioned, and who lived ad Smyrna before che Turkish occupation and has since died. He tried on on two of them, and was favourably impressed by their subsequent effects. “They worked!”, he said.
